Instructions
Preheat oven to 180° C top and bottom heat.
Put soy milk and apple cider vinegar in a bowl and let stand for about 10 minutes.
In another bowl, whisk together the flour, ground hazelnuts, sugar, salt, and baking powder.
Add margarine or soft vegan butter and the dry ingredients to the soy milk and mix everything with a mixer just until the ingredients are combined.
Caution: Stirring too much can cause the cake to become rubbery.
Grease a loaf pan with margarine and pour in the cake batter.
Bake on the middle shelf for about 50-60 minutes. Test with a chopstick if the cake is done before you take it out of the oven.
Let the nut cake cool well and then carefully lift it out of the mold. Bon appétit!
Notes
Decorate your vegan nut cake with a vegan chocolate coating or with powdered sugar. Both are super delicious and go great with this cake.
