Vegan nut cake is just as delicious, moist and just irresistibly good. Thanks to a little orange zest, it also smells wonderful and takes on a slight fruity note. Have fun baking it!

Nut cake and I have a very special relationship. I know that sounds weird. But when I was 15, my mom and I had a nut cake phase. Every Wednesday we bought fresh nut cake from the bakery for several months. It was so good that we just couldn’t get enough. In general, we often had funny food phases, during which we were particularly crazy about one food … Fun memories!

Vegan nut cake: Ingredients

  • soy milk: I like to use soy or oat milk for baking. Of course, you can also use any other plant milk.
  • apple cider vinegar: When combined, apple cider vinegar and plant milk become a kind of vegan buttermilk. This makes the cake particularly airy and fluffy.
  • grated half an organic orange: A little grated orange gives the nut cake a slightly fruity note. If you don’t want that, you can just leave it out.
  • flour: I used regular wheat flour for this cake. However, the cake should work just as well with a light spelt flour or a gluten-free flour blend.
  • sugar
  • ground hazelnuts: You can also replace the hazelnuts with ground almonds or walnuts.
  • baking powder
  • salt
  • vegan butter or margarine

Shelf life

The cake will stay fresh in an airtight container for about 5–6 days. You can also freeze the nut cake. There it will stay fresh for about 2–3 months.

Method

Step 1: Preheat oven to 180° C top and bottom heat.

Step 2: Put soy milk and apple cider vinegar in a bowl and let stand for about 10 minutes.

Step 3: In another bowl, whisk together the flour, ground hazelnuts, sugar, salt, and baking powder.

Step 4: Add margarine or soft vegan butter and the dry ingredients to the soy milk and mix everything with a mixer just until the ingredients are combined.

Caution: Stirring too much can cause the cake to become gooey.

Step 5: Grease a loaf pan with margarine and pour in the cake batter.

Step 6: Bake on the middle rack for about 50–60 minutes. Test with a chopstick if the cake is done before you take it out of the oven.

Step 7: Let the nut cake cool well and then carefully lift it out of the mold. Bon appétit!

Optional

Decorate your vegan nut cake with a vegan chocolate coating or with powdered sugar. Both are super delicious and go great with this cake.

  • 300 ml soy milk
  • 1 TL apple cider vinegar
  • Abrieb einer halben Bio Orange
  • 250 gr Mehl
  • 120 gr Zucker
  • 100 gr gemahlene Haselnusskerne
  • 2 TL Backpulver
  • Prise Salz
  • 100 gr vegane Butter (weich) Margarine

Instructions
 

  • Preheat oven to 180° C top and bottom heat.

  • In another bowl, whisk together the flour, ground hazelnuts, sugar, salt, and baking powder.
  • Add margarine or soft vegan butter and the dry ingredients to the soy milk and mix everything with a mixer just until the ingredients are combined.

  • Grease a loaf pan with margarine and pour in the cake batter.
  • Bake on the middle shelf for about 50-60 minutes. Test with a chopstick if the cake is done before you take it out of the oven.
