It doesn’t always have to be the classic tomato salsa – you can make a wonderfully fresh nectarine salsa with fresh nectarines. It tastes wonderfully fruity and is perfect for any Mexican evening or as a fruity salad for the barbecue.
I love nectarines – especially when they are just transitioning and still firm, but starting to soften a bit. I hope you understand what I mean. The idea for the nectarine salsa came about when my sister announced she was coming over with her friends. And I had been craving a Mexican night for a long time, with margaritas, guacamole, nachos and of course salsa. If you’re also up for a Mexican night with your friends, feel free to take this as an invitation to throw your own party now.
With just a few ingredients, the salsa is quickly ready to throw on your nachos with creamy guacamole.
